A Nikkei Knockout: Above Eleven x Fusion Ceviche Serve Up a Culinary Power Play This April

Two chefs, five courses, one unforgettable night.

Hold on to your chopsticks, Dubai — West Palm’s sky-high stunner Above Eleven is turning up the heat (and the altitude) this April with a fiery fusion collab that promises to be the toast of the town. For two nights only — April 17th and 18th — Chef Erick Ramos of Above Eleven is teaming up with the ceviche sorceress herself, Chef Penelope Díaz of Peru’s famed Fusion Ceviche, for a sensational Four Hands dinner that’s as elevated as the 14th-floor views.

If your idea of “dinner with a view” needs a little razzle-dazzle, this one’s got it all: skyline sparkle, DJ beats, and a five-course menu that’s basically edible poetry. It’s Peruvian Nikkei cuisine done with finesse, fire, and plenty of flair.

Forks at the ready: here’s what’s going down

The evening kicks off with a duo of amuse-bouchées that are anything but shy — think citrusy Leche de Tigre with all the zing, and a bold Crudo that packs a one-two punch. Then come the starters, and they’re not here to play. The Causitas plate is a riot of colour and texture (hello, salmon tartare and rocoto mayo), while the Pulpo Anticuchero brings tender octopus dancing in sauces that demand a moment of silence.

The mains? Game-changing. Dive into a luscious Sudado of red snapper in a bath of chicha de jora and Peruvian spice, then gear up for the grand finale of Pachamanca baby chicken, served with roasted sweet potatoes and a hit of herby Uchucuta sauce that might just make you weep.

And just when you think you can’t handle another bite — dessert. A generous platter starring Arroz con leche, mazamorra morada, and dreamy alfajores de lucuma. It’s a Peruvian love letter in sugar form.

All of this? From just AED 395 per person

That includes a welcome drink and water, or if you’re feeling fancy (and why not?), you can opt for the AED 595 package with handpicked beverage pairings for each course — cocktails, wines, digestifs, and a probable urge to salsa your way into the weekend.

Setting the mood: music, mixology, and more

The party starts at 6pm and rolls until 11:30pm. There are no fixed sittings, so you can float in at your leisure (as long as you’ve booked — and you will want to). From 8pm, a live DJ turns up the tempo, and by 9pm, a live percussionist ensures you’ll be vibing between bites. Basically, it’s dinner and a show, minus the velvet curtains.

Did we mention the view?

From your table you’ll spot the glittering Burj Al Arab, the swoon-worthy Marina skyline, and The Palm unfurling beneath you like a very expensive welcome mat. Above Eleven isn’t just a rooftop — it’s a rooftop with bragging rights.

From NYC to DXB — With Love, Altitude, and Aji Amarillo

Born from a bird’s-eye love affair with New York’s Central Park skyline, Above Eleven set out to bottle that same sense of soaring freedom and bring it to rooftops around the world — minus the Manhattan mayhem. The result? A dining experience that floats somewhere between refined and relaxed, where sky-high doesn’t mean stuck-up, and every guest is invited to kick back, clink glasses, and savour the moment.

Here, unpretentious meets unforgettable. The vibe is effortlessly cool, the views go on for days, and the menu? A delicious tribute to Nikkei cuisine — a Japanese-Peruvian love story with deep immigrant roots and a legacy of bold flavours, vibrant plates, and culinary fusion done right.

Whether you’re a hardcore foodie, a Nikkei newbie, or someone who just really likes a well-plated snap for the ’Gram — this culinary collab is your golden ticket.

Come for the ceviche. Stay for the view. Leave with stars in your eyes and maybe a little sauce on your shirt.
